French Onion Soup
Delicately spiced and extremely creamy, this vegetarian French style soup is topped with fragrant herbs and cheese.

  • 3 sliced onion
  • 1 tbsp butter
  • 3 button mushrooms
  • ½ cup refined flour
  • salt
  • Cracked black pepper
  • 1 tsp Worcestershire sauce
  • 1 tsp red vinegar
  • 1 tsp mustard paste
  • 1 cup vegetable stock
  • Cracked white pepper
  • 2 bread slices
  • ½ cup gruyere cheese
  • A few chives


  1. 1

    Take butter in a pan and add chopped onion and thyme and cook on a low flame.
  2. 2

    Add salt, cracked black pepper, Worcestershire sauce, red vinegar, mustard paste, vegetable stock, mushrooms and mix well.

    Take refined flour In a baking tray and keep it in an oven to make it brown in colour.
  4. 4

    Transfer the roasted refined flour to a bowl, add soup, mix it and blend it in a mixer.
  5. 5

    Add this paste to the soup and mix well.
  6. 6

    To the soup, add cracked white pepper, turn off the gas and pour the soup into a serving bowl.

    Cut the bread slices with a ring cutter and keep it in the oven till it turns slightly brown in colour.

    Add grated cheese on the bread and place the bread on the soup.
  9. 9

    Keep the soup in the oven.
  10. 10

    Later, remove the soup, garnish with chopped chives and serve.
